Method of Sale: Retail, On Farm Sales
Casey Family Farm is run by Dennis and Lois Casey of Viola, Tennessee. We have lived in the Viola valley for the past 21 years. Our five children were fortunate enough to grow up in the foothills of Warren County, and now there is another generation growing up in these same foothills. Dennis Casey has worked with beef and dairy cattle for the past 35 years.
We want to produce high quality, rich milk that is as close to “from the cow” freshness as possible. We decided that our priority would be quality rather than quantity. Guernseys are very difficult to find, but they produce a unique, rich yellow milk that is high in beta carotene and butterfat. We have a small herd and we want to keep it that way. Each cow is grass-fed and receives lots of individual attention. We believe that gives our milk a special, fresh taste that is very unique and different from what you will get in the store.
Dennis and Lois Casey both had grandparents who had small dairies and sold milk to customers in town. The milk was just like Nature produced it- fresh, rich milk without additives or processing. Our goal is to produce milk as close to Nature as possible. We pasteurize in a vat pasteurizer soon after milking, cool the milk quickly, and bottle it for sale. This gives a product that is very fresh. We do not homogenize the milk or add any other substances because our goal is to provide pure, fresh milk. Because we do not homogenize the milk, you will need to shake the milk thoroughly before drinking. Before you shake it, you will see a thick, white cream at the top. That is heavy cream, which will separate from the whole milk. At the bottom, you will see skim milk. Some people like to use the cream in their coffee and drink the skim milk. Others love the rich taste of the golden, rich Guernsey whole milk.
We have never used BST. Our priority has always been healthy, contented cows who produce a rich product- not production. Our cows are more like members of the family and we do our best to take care of them.
You can find our milk at our Farm Store on Chestnut Grove Road or you can call for home delivery options (931)635-3031 in the McMinnville and Manchester areas.
